Tempering
All good quality chocolate must be tempered before being used to make candies. This must be done to give the chocolate the proper texture, hardness, color and glossiness. Without tempering chocolate, it will become lumpy or will get grey or white streaks or spots when it hardens.
In order to temper chocolate you need a machine that will get chocolate to the right temperature or you will need a double boiler. This process is rather difficult and requires some equipment that people don’t often keep on hand, so tempering is often only done by professionals to get the best results.
To temper chocolate in a double boiler:
- First you need to get the water to 180 degrees (Fahrenheit) and then take it off the heat source.
- Then you put broken up chocolate in the top pan to melt it.
- Once the chocolate is melted, you want to raise the heat until the chocolate is 120 degrees.
- You then take the pan off the heat again and slowly cool the chocolate until it is 82 to 84 degrees for milk chocolate and a couple degrees more for dark chocolate.
- You then raise the heat again, but only a little bit, to 87 to 89 degree for milk and a couple degrees higher for dark chocolate.
*You will need a candy thermometer to accurately check temperatures, because these temperatures must be exact, or the chocolate will not temper properly.
*This process must be repeated every time the chocolate hardens if you want to continue to use the left over chocolate latter or if it gets too cool when you are working with it.
*This process can also be done in a microwave, but is very difficult so it is not suggested to be done with high quality milk chocolate. If you use the microwave, you need to use the defrost setting.
